Last week, I celebrated one of my soul sisters, Addie’s birthday. Addie and I often eat Life Alive, our go-to plant-based Cambridge restaurant. For Addie’s birthday, I recreated her favorite Life Alive meal, the Swami Bowl. In honor of Addie’s radiant strength, I have renamed it the “Shakti Bowl.”

- 2 cooked cups brown rice
- 4 leaves kale
- 1 cup shredded carrots
- 1/2 sweet onion, chopped finely
- 1 head broccoli
- 1 avocado
- Raisins
- Tamari almonds
Sweet Miso Curry Sauce Ingredients:
- 1 garlic clove
- 1/2 teaspoon curry powder
- 1 tablespoon lemon juice
- 1 tablespoon water
- 1 teaspoon soy sauce
- 1.5 teaspoon nutritional yeast
- 1.5 teaspoon miso
- 1.5 teaspoon honey
Recipe:
- Prepare brown rice and set aside
- Blend the sweet miso curry sauce ingredients and set aside
- Heat a sauté pan over medium heat
- Add the carrots, broccoli, onion, and a dash of water to the pan. Cover for a few minutes to steam the vegetables.
- When the onions are soft, and the broccoli has turned bright green, uncover, and turn the heat to low
- Add the brown rice, kale, and sweet curry miso sauce on low heat until the kale wilts
- Top with raisins, tamari almonds, and avocado
